2009 Entrepreneur of the Year: Huarachitos
When Huarachitos opened in October, 2008, Ana Martinez and Jose Luis Pantiga were embarking on their dream of bringing gourmet Latin American dining to the Rainier Valley community. Pantiga, the chef, had more than 10 years of experience working in restaurants at the Columbia Tower and the Space Needle and a deep desire to serve the neighborhood where he and Martinez live. They designed a distinctive space — just 10 tables surrounding an open-plan kitchen — with a welcoming, intimate feel.
Unfortunately, challenges — from misunderstandings with the landlord to problems with the plumbing — quickly depleted their working capital and threatened the future of the restaurant. But Martinez and Pantiga kept working.
Huarachito's cuisine soon won an enthusiastic audience, and community leaders noted the positive effect the small restaurant was having on the neighborhood. In 2008, Rainier Valley Community Development Fund (CDF) provided loan resources to help secure Huarachitos' future.
“Ana Martinez and Jose Luis Pantiga demonstrated a spirit of entrepreneurship as they dealt with the many challenges of opening their restaurant,” said Tina Houston, project manager at Rainier Valley CDF.
Huarchitos has since added a bar and a deck for summer dining. Martinez and Pantiga are now planning extended hours, and a Sunday brunch.
“Our goal is to listen to our customers and provide them with the best dining experience possible,” Martinez said.
Huarachitos received the 2009 Entrepreneur of the Year Award from the Rainier Valley Community Development Fund.
